Banana Bread
- 100g caster sugar
- 150g butter
- 2 eggs
- 140g plain flour
- 3 very ripe bananas
- Pre-heat oven to 200ºC/180ºC fan
- Soften 150g butter
- Whisk the butter and 100g caster sugar in a bowl until smooth (an electric whisk will make this a lot quicker)
- Gradually whisk in 2 eggs
- Peal 3 very ripe bananas and mash the flesh with a fork in a separate bowl
- Add the 140g plain flour and mashed bananas to the first bowl and fold them together with a knife
- Butter a cake or bread tin and pour the mixture into it
- Bake for 1 hour until a knife comes out clean when inserted into the middle
