Banana Bread

  • 100g caster sugar
  • 150g butter
  • 2 eggs
  • 140g plain flour
  • 3 very ripe bananas
  1. Pre-heat oven to 200ºC/180ºC fan
  2. Soften 150g butter
  3. Whisk the butter and 100g caster sugar in a bowl until smooth (an electric whisk will make this a lot quicker)
  4. Gradually whisk in 2 eggs
  5. Peal 3 very ripe bananas and mash the flesh with a fork in a separate bowl
  6. Add the 140g plain flour and mashed bananas to the first bowl and fold them together with a knife
  7. Butter a cake or bread tin and pour the mixture into it
  8. Bake for 1 hour until a knife comes out clean when inserted into the middle
  9. 1 hour
