Sourdough Pizza

- 500g strong or plain white flour
- 300g sourdough starter
- 2 tbsp olive oil
- 230ml water
- pasata, mozzarella and other toppings (such as mushrooms, peppers, goats cheese, olives, etc), to top
- Heat 230ml water so it is warm but not too hot to touch
- Mix 500g strong or plain white flour, 300g sourdough starter, 2 tbsp olive oil in a bowl and then mix in the warm water
- Tip the dough out onto a dry surface and kneed the dough for about 10 minutes (when ready the dough should be smooth and slightly transparent when held up to a light)

- Pre-heat the oven to the hottest it will go with a pizza stone inside (at least 250ºC if possible)
- Place the dough in an oiled bowl and cover with a damp tea towel for 20 minutes
20 minutes
- Split the dough into 5 equal chunks (each will form a pizza)
- One at a time, roll the pizza out on a well floured surface, transfer it to the preheated stone and top with pasata, mozzarella and other toppings (such as mushrooms, peppers, goats cheese, olives, etc), to top
- Place at the top of the oven and cook for 10 minutes
